Bacon baked on a rack with maple syrup brushed on in the last ten minutes. Sweet, salty, crisp, and the smell alone will get everyone downstairs.
Ingredients
- 1 lb thick-cut bacon
- 3 tablespoons Skarda pure maple syrup
- Black pepper, or a pinch of cayenne if you like heat
- Optional: 1 tablespoon maple sugar for the top
Method
- Heat the oven to 400 F. Set a wire rack on a foil-lined sheet pan and lay the bacon on it in one layer.
- Bake 12 to 15 minutes, until it is starting to crisp.
- Brush both sides with maple syrup, grind pepper over it, sprinkle the maple sugar if using, and bake 6 to 8 minutes more until the glaze is set and bubbling. Watch it; maple goes from done to burnt fast.
- Let it sit 3 minutes on the rack. It crisps as it cools.
Notes
- Cut into pieces and put it on the oatmeal, a burger, or a salad with the maple vinaigrette.
- The foil is not optional. The drips set like candy.
